2017 is off to a great start! Feeling a bit low energy after my workout this morning, I decided to whip up this easy (and so satisfying!) smoothie bowl recipe. I’m a huge fan of making-it-up-as-you-go type of cooking, so my version is below, but feel free to substitute ingredients based on your own personal preferences and dietary needs. I’m allergic to all nuts, so I sprinkled chia, pumpkin seeds, and oats on top, but almonds or cashews could make a great substitute for an extra boost of protein.
In a blender, combine:
½ cup each of frozen, organic strawberries and blueberries
¼ cup coconut milk (or substitute almond or soy)
½ cup cold water
2 tsp. protein powder (I like the plant-based versions from Well Path that is personally customized to your own needs)
1 tsp. chia seeds
Pour blended smoothie in a bowl and sprinkle with your choice of toppings! I particularly love the combo of grapefruit and berries. Would love your recommendations in the comments below!
